Despite Castile has never had a reputation for its white wines, Vallegarcía Viognier is a Spanish white wine that should not be overlooked.
Crafted by the Pago de Vallegarcía winery, this single varietal Viognier wine represents a major step forward in the region, as far as quality and elegance are concerned.
The Viognier grapes come from a single, 3-hectare estate located in a pristine environment, surrounded by forests, in the very heart of the Toledo Mountains.
Harvested by hand, the grapes were cold-soaked for 12 hours.
Then 80% of the wine was fermented in stainless steel tanks and 20% completed the process in French oak barrels.
Then this single estate white wine belonging to the DO Pago Vallegarcía was aged on its lees in those same barrels for a period of 6 months.
Finally, Vallegarcía Viognier 2017 was further aged for 3 months in the bottle prior to its commercial release.

The wine Vallegarcía Viognier has a clean, dense, bright golden colour with some greenish tinges.
This varietal Viognier from Pago Vallegarcía (Toledo) is refined and complex. Aromas of white fruit, citrus, toast, pepper, aniseed, fennel and bitter herbs over a smokey background, characteristic of a white wine fermented in oak.
Savoury and well-balanced, this white wine by Pago de Vallegarcía shows nerve and a bold structure. Some bitter notions, along with flavours of dried fruit, vanilla, cinnamon, pomelo and blood orange. Well-balanced acidity and long, complex finish.

The lush Vallegarcía Viognier 2017 will pair wonderfully with a truffled turkey or a roast duck. If you feel adventurous, try pairing it with Oriental cuisine.

Viognier is a white grape with little natural acidity to counteract its tropical and aromatic exuberance. This wine manages to overcome that fact. This is fresh, and of course luscious and super tasty.
