The wine Fabio Coullet Ingénito is produced by the Fabio Coullet winery from vineyards located in the impossibly rugged landscape of La Axarquía.
Composed mainly of schist and slate soils - like world-famous Priorat - and with slopes up to 70 degrees - even steeper than Priorat - La Axarquía is a little-known area within the DO Sierras de Málaga whose potential for producing top-quality wines is just beginning to be properly explored.
This varietal Grenache wine is sourced from vinyes around 10 years of age planted in slate and schist soils, at 300 to 450 metres of altitude.
After a manual harvest and an exacting selection of the grapes, this Spanish red wine was macerated with the skins and 30% of the stems before fermenting with native yeasts for 8-10 days in stainless steel tanks. The malolactic fermentation of the red wine Fabio Coullet Ingénito 2021 was carried out in 500-litre French oak barrels, after which the wine was aged for 4 months.
This red wine from Sierras de Málaga offers a different take on Grenache, Spain’s hottest red variety.
