Fresh and deeply mineral, the wine Montenovo is produced from the youngest vineyards of Bodegas Valdesil, as well as from vineyards owned by local winegrowers from the villages of Rubiá, A Rúa, Larouco, Petín and O Bolo, in DO Valdeorras.
A varietal Godello, this Spanish white wine was meticulously vinified. Harvested by hand, the grapes were carefully selected and cold-macerated before fermentation.
After that, this white wine from Valdeorras was fermented with indigenous yeasts. The wine did not went through malolactic fermentation to preserve its crisp acidity.
Finally, the wine Montenovo 2023 was clarified with mineral agents and cold-stabilized before its bottling.
Pair this young white wine with shrimp and rice dishes.
