Founded in 1887, the Cavas Hill winery is one of the oldest within the DO Cava. It is part of the Ferrer Wines group, which encompasses the wine projects of the Ferrer Sala family — the founders of the Freixenet empire. Pedro Ferrer Noguer, a fifth-generation member of the family, serves as the group’s president.
The estatevineyards of Cavas Hill are located in the village of Moja, in the municipality of Olérdola, Garraf, an area located in the Alt Penedès region known for its limestone soils and closeness to the Mediterranean Sea, characteristics that influence the fresh, saline nature of the wines. Spanning approximately 50 hectares, the vineyards are planted with traditional varieties — Macabeo, Xarel·lo and Parellada — as well as red varieties such as Pinot Noir, Grenache and Trepat, which are used to produce rosé Cavas. The vines range from 20 to 40 years old, and the estate follows organic farming principles.
The sparkling wines by Cavas Hill are crafted using the traditional method in a magnificent modernist building, which is officially recognized for its historical and architectural significance. Alcoholic fermentation takes place in stainless-steel tanks, followed by a second fermentation and aging in the bottle. The Cavas Hill portfolio includes Young, Reserva and Gran Reserva Cavas. These are easily identified by their labels, which are inspired by Gaudí’s iconic "panot" — the paving tile that embodies the essence of Barcelona and the spirit of the legendary Catalan architect.
