Produced by bodega Alta Alella, the wine Alta Alella Blanc de Neu is a varietal Spanish sweet white wine made from Pansa Blanca, the local variant of the Xarel·lo variety in the Alella region.
The vineyards, only 2 kilometres from the Mediterranean Sea, are composed of sauló soils -a kind of decomposed granite.
First, the grapes were selected, fully destemmed and cold-macerated for 18 hours to extract their aromatic compounds. Then they were transferred into oak barrels. The alcoholic fermentation of this organic sweet white wine was stopped to preserve a high amount of residual sugar.
After that, the wine Alta Alella Blanc de Neu 2023 was aged for 4 months in the barrels.
