The Dominio de Cair winery, the DO Ribera del Duero. brand of Bodega Luis Cañas, produces the wine Cair Selección La Aguilera solely from Tempranillo.
The grapes are sourced from 40 to 50-year-old vineyards located at an altitude of 800 metres above sea level, in a pristine area surrounded by forests.
Harvested by hand and selected in the cellar, the grapes underwent a cold-maceration in order to extract colour and aromas. After that, this Spanish red wine was fermented in stainless steel tanks.
Malolactic fermentation took place in new French and American oak barrels (50%-50%). Then, the wine Cair Selección La Aguilera 2021 was aged for 14 months.
Finally, this red wine from Ribera del Duero was bottle-aged for no less than 12 months before its release.
