The white wine Anima Mundi Cantallops, formerly known as Cantallops Xarel·lo d'AT Roca, is made by Agustí Torelló Sibill & Agustí Torelló Roca, the father-son team at the helm of the AT Roca family winery.
This confidential Spanish white wine is produced from a single, 0.98-hectare Xarel·lo vineyard planted in 1955 in the Costers de l'Ordal area, at 320 metres of altitude, in DO Penedès.
After the harvest, the grapes were fermented with indigenous yeasts. Then a 70% of this white wine from Penedès was aged on its lees in 500-litre French oak barrels, and the rest was aged in egg-shaped concrete vats. Both were aged for 8 months.
Finally, the white wine Anima Mundi Cantallops 2023 was bottled unfiltered and aged for a further months before its release.
We suggest that you aerate this organic white wine some time before you drink it.
