The wine Cortijo Los Aguilares Tadeo Tinaja is a varietal Petit Verdot produced from vines grown at almost 1,000 metres of altitude in the Serranía de Ronda, DO Málaga-Sierras de Málaga.
This Spanish red wine is sourced from a single estate, Pago El Calero, farmed with organically certified techniques. The altitude factor, together with the temperature differences between daytime and nighttime, allows for a longer growing season, which in turn gives the usually rough tannins of the Petit Verdot variety enough time to ripen fully.
The grapes were harvested by hand and refrigerated on arriving at the cellar. Meticulously sorted and destemmed, this red wine from Sierras de Málaga was fermented under controlled temperature and then transferred into 900-litre clay vessels.
After that, the red wine Cortijo Los Aguilares Tadeo Tinaja 2023 went through malolactic fermentation and was aged for 12 months in the vessels. The porous material further smoothened the tannins and delivered a transparent expression of the variety.
It is advisable to aerate this organic red wine before drinking.
