Coming from Val do Salnés, a subzone of DO Rías Baixas, Davide Observador is crafted by the prestigious winemaker Pablo Estévez, chosen Spain's "Best Young Wines Winemaker" in 2019, and David Acha, director of Bodega Davide.

A blend of Albariño and Godello, this Spanish white wine is sourced from a single parcel of old vines grown in very in poor granitic soils.

As with all of the wines from , vinification was carried out following minimal intervention techniques. Each variety was separately fermented with the stems in stainless steel tanks, using native yeasts, for a period of 20 days. Then this white wine from Rías Baixas was blended and aged for 7 months minimum on lees with periodic stirrings.

Finally, Davide Observador 2022 was cold stabilized and bottled unfiltered.

Pair this white wine aged on lees with fish recipes.

Appearance

The white wine Davide Observador is medium yellow with some steely glints.

Nose

This blend of Albariño and Godello is nuanced and inviting. Aromas of lychee, passion fruit and pears, with some citrusy and herbal notes and some well-defined floral overtones.

Palate

Gently unctuous and intricate, this white wine from Bodega Davide has a smooth texture, with a rich mid palate and a noteworthy acidity. Finish is gently bitter and stony, with an aftertaste of flowers and tropical fruit.

Our personal opinion

Poised and savoury, Davide Observador 2022 is a very smart buy.
