Coming from Val do Salnés, a subzone of DO Rías Baixas, Davide Observador is crafted by the prestigious winemaker Pablo Estévez, chosen Spain's "Best Young Wines Winemaker" in 2019, and David Acha, director of Bodega Davide.
A blend of Albariño and Godello, this Spanish white wine is sourced from a single parcel of old vines grown in very in poor granitic soils.
As with all of the wines from , vinification was carried out following minimal intervention techniques. Each variety was separately fermented with the stems in stainless steel tanks, using native yeasts, for a period of 20 days. Then this white wine from Rías Baixas was blended and aged for 7 months minimum on lees with periodic stirrings.
Finally, Davide Observador 2022 was cold stabilized and bottled unfiltered.
