Coming from Val do Salnés, a subzone of DO Rías Baixas, the wine Davide Observador is crafted by the prestigious winemaker Pablo Estévez, chosen six times Spain's "Best Young Wine Winemaker", and David Acha, director of Bodega Davide.
An equal blend of Albariño and Godello, this Spanish white wine is sourced from a single parcel of 25+ year old vines grown in poor granitic soils.
As with all of the wines from , vinification was carried out following minimal intervention techniques. Each variety was separately fermented with the stems in stainless steel tanks using native yeasts. Then this white wine from Rías Baixas was blended and aged for no less than 9 months with periodic stirrings.
Finally, the white wine Davide Observador 2023 was cold stabilized and bottled unfiltered.
