Details
Produced by Venus "La Universal", the hippest winery in DO Montsant, Dido Blanc is made by the well-known Sara Pérez (daughter of Josep-Lluís Pérez, head of Mas Martinet), and her husband René Barbier Jr, the son of the great René Barbier, owner of Clos Mogador.
The 2021 vintage is a blend of Macabeo, White Grenache and a brushstroke of Xarel·lo (known as Cartoixà in the Montsant and Priorat area). This Spanish white wine is made from organically grown grapevines up to 70 years of age, located in the towns of Marçà and Falset. The soils are mainly composed of clay and limestone.
The wimemaking process of this white wine from Montsant is quite interesting. A 15% of the grapes underwent spontaneous fermentation with wild yeasts in open vats. Another 20% of the grapes were macerated with their skins for 24 hours, and the rest were gently crushed.
After that, 40% of Dido Blanc 2021 was aged in French oak barrels, 30% in old oak vats and the rest in ceramic vessels, for a period of 9 months.
Serve it cool, not chilled. Aerate this organic white wine some time before drinking.

White Dido
This white wine is utterly characteristic. For me it defines like no other the personality of the Montsant region, which I like immensely.

Dido
One of Montsant - and Catalonia - absolute top whites. Luscious texture, taut acidity, very precise, with depth and real sense of terroir.
