Produced by Estones Vins, also known as Mas Sersal, the wine Estones PX is a rather unusual Spanish white wine from DO Terra Alta.
This is one of the very few unfortified varietal Pedro Ximénez wines made outside of Sherry country.
The 60-year-old vines were harvested by hand. Once in the cellar, they were macerated with the skins and fermented in stainless steel tanks for 36 days. After completing malolactic fermentation, this white wine from Terra Alta was aged for 8 months on lees in the tanks and in clay vessels.
Finally, the white wine Estones PX 2022 was stabilized, clarified and filtered before bottling.
Intense and characterful, this white wine aged on lees will pair excellently with smoked foods and creamy cheeses.
