The unusual Exopto is made principally from Graciano, an indigenous variety from La Rioja valued for its high acidity which usually plays second fiddle to Tempranillo. In this Spanish red wine the traditional roles are reversed: 70% Graciano, 25% Tempranillo and 5% Grenache.
Produced by Bodegas Exopto, the wine project of Frenchman Tom Puyabert, the Graciano and Grenache grapes are sourced from vines 80 years old on average, planted in clay-limestone soils at 500 metres of altitude. The Tempranillo comes from 30-year-old vineyards at 400 metres above sea level.
Hand-harvested in late September, the grapes were macerated for a week and then fermented at a low temperature. Then this red wine from La Rioja was transferred into used 225 and 600-litre French oak barrels.
After that, Exopto 2019 was aged for 18 months. Before hitting the market, the wine was aged for some time in the bottle.
Aerate this Crianza red wine 30 minutes before drinking.
Pair with meat recipes and cured cheeses.
The red wine Exopto is medium purple with a ruby rim.
This blend of Graciano, Tempranillo and Garnacha has remarkable intensity and depth. Juicy wild berries with a mineral undercurrent, with a splash of liquorice, herbs, Moroccan spices and liquorice. Expressive and ever-evolving.
This wine of Bodegas Exopto is textured and flavourful, with a spectacular acidity-Graciano's trademark- plush tannins and a deeply mineral character. Amazing concentration of flavours, with wild berries, spices, smoke and a deep minerality.
