Produced in DO Costers del Segre, Catalonia's westernmost designation of origin, the wine L'Olivera Reserva Superior is a rather original Spanish sparking wine from bodega L’Olivera Cooperativa.
A varietal Macabeo, the grapes are sourced from certified organic vineyards with clay-limestone soils located in the village of Vallbona de les Monges (Valls del Riu Corb subzone).
After completing alcoholic fermentation in stainless steel tanks, this vegan sparkling wine was aged in American and French oak barrels for 3 months to give it more creaminess and structure.
Then the wine L'Olivera Reserva Superior 2020 went through secondary fermentation in the bottle and was aged for 24 months. The result is a highly original organic sparkling wine.
The disgorging is made on demand. No sugar is added to this sparkling wine from Costers del Segre after the operation.
