This single vineyard Spanish sparkling wine is produced from over 50-year-old vineyards. It is made mostly from Xarel·lo (55%), the variety which best expresses the terroir of Penedès, blended with 25% Macabeo and 20% Parellada.
After a meticulous harvest, the three base wines of this Cava Gran Reserva were aged on their lees in chestnut barrels for a period of 10 months.
After that, the sparkling wine Mestres Clos Nostre Senyor 2015 was bottled, completed secondary fermentation and was subsequently aged for 90 months.
Finally, this Cava from Penedès was disgorged on the date printed on the back label.
It is advisable to open the bottle of this Cava Brut Nature some minutes before serving.
The cava Mestres Clos Nostre Senyor is pale yellow with some metallic glints.
Quite elegant, this blend of Xarel·lo, Macabeo and Parellada suggests some notes of ripe white fruit, yellow fruit and citrus combined with some floral remembrances. The ageing in barrels and the subsequent ageing period in the bottle shows in some creamy, toasted and smokey notes.
This cava from bodega Mestres has a silky texture, an excellent acidity and some creamy, nicely integrated bubbles. Textured, fresh and and effortlessly confident, the finish is long, toasted and gently mineral, with a remembrance of aromatic herbs and smoke.
