The excellent Olivares Dulce Monastrell is, as one might expect, made from Monastrell, one of Spain's most important indigenous varieties.
The grapes were harvested in late Autumn, at a time when they had reached full maturity and had a high sugar content.
They come from the best plots of the winery, planted with pre-phylloxera, ungrafted vineyards located at the very heart of Jumilla.
Once in the cellar, the grapes were partially fermented to preserve the naturally sweet character of the wine and macerated with the skins.
To showcase the fruit in pristine condition, Dulce Olivares Monastrell 2017 was not aged in oak. Instead, it was bottled and aged for 2 years in the cellar.
This sweet red wine of Bodega Olivares is a little-known gem from Jumilla.
The sweet red wine Olivares Dulce Monastrell has acherry colour with a ruby rim.
Remarkably complex and deep, this sweet wine from Jumilla conveys aromas of dried figs, black fruit, tapenade, violets, raisins, aromatic herbs and some dim mineral undertones.
Meaty, bold and vibrant. This Monastrell from Jumilla has a silky, voluptuous body sustained by a crisp, tight acidity. Liquor-infused fruit and some deep mineral undertones, intertwined with remembrances of chocolate, spices, black olives and Mediterranean garrigue. This wine of the Olivares winery has an extremely long finish.

Somewhat reminiscent of a great Port, Olivares Dulce Monastrell 2017 pairs marvelously with blue cheeses and dark chocolate.
