The sparkling wine Raventós i Blanc Textures de Pedra is interesting for several reasons. Coming from Conca del riu Anoia, a region in Alt Penedès, this Blanc de Noirs is made from a rare combination of grape varieties.
Indeed, this Spanish sparkling wine of the Raventós i Blanc winery is a blend of 60% Xarel·lo Vermell (Red Xarel·lo), a pink-skinned mutation of the Xarel·lo variety and 40% Sumoll, a high-acidic, Nebbiolo-like grape.
The grapes are sourced from a 2.34-hectare vineyard with soils of marine origin, Vinya Més Alta, planted in 2002 and tended following the guidelines of organic and biodynamic farming.
Harvested by hand, the grape bunches were delicately pressed and drawn-off at a low temperature. Each variety and each individual plot were fermented separately in stainless steel tanks for a period of 9 to 15 days.
After that, the sparkling wine Raventós i Blanc Textures de Pedra 2021 completed secondary fermentation in the bottle. After that, this organic Blanc de Noirs was aged for 42 months in the bottle before its commercial release.
