The distillery of the wind.
Founded by Tetsuo Yamaguchi, the Asaka Distillery opened its doors in 2016 in the village of Fukushima, in the Tohoku region of the Honshu island, the largest of the Japanese archipelago. The facilities are equipped with a mash tun, two pot stills and on-site storage.
Made from the purest meltwater from the surrounding mountains, the Japanese whisky crafted by the Asaka Distillery is called Yamazakura. 'Yama', meaning 'mountain' in Japanese, is a reference to Mount Bandai, a volcano of the region; 'Zakura' is the cherry blossom, the national flower of the land of the rising sun.
After a meticulous distillation, the Asaka whisky is aged for variable periods of time in ex-Bourbon, Sherry and Mizunara oak casks. The maturation process of the Yamazakura whisky of the Asaka Distillery is decisively influenced by the effect of the local wind, called Bandai Oroshi, which accelerates and adds a further layer of complexity to the process.
