Owned by the Ferrer Sala family — the founding dynasty behind the Freixenet winery — the origins of the Can Sala winery date back to 1861, when Josep Ferrer Sala began producing wine at the family estate in Sant Quintí de Mediona, in the Alt Penedès region. The historic winery building was constructed in 1901, and the first bottle of sparkling wine was produced in 1914. Today, the company is part of the Ferrer Wines group, established to preserve the family’s historic vineyards following the sale of Freixenet to the German giant Henkell. Pedro Ferrer Noguer, a member of the family’s fifth generation, serves as the group’s president.
Bodega Can Sala, which produced its first vintage in 2004, is dedicated exclusively to crafting long-aged Cavas using traditional grape varieties of the DO Cava. All the grapes are sourced from two unique plots located in Mediona, a village in the Penedès region which offers exceptional conditions for the production of Cava de Paraje Cualificado (a classification for Cavas from specific, high-quality vineyard sites). A distinctive feature of the Cavas by Can Sala winery is their composition: they are crafted using only two of the three traditional varieties — Xarel·lo, sourced from the "Clos de la Morella" vineyard, and Parellada, grown in the "La Pebressera" vineyard. Both plots feature clay soils and are cultivated using minimal-intervention techniques and organic farming practices.
Furthermore, it is worth noting that the Cavas by bodega Can Sala are vinified using a traditional wooden vertical Dubois press dating back to 1895, which yields a grape must of exceptional quality and delicacy. Once the winemaking process is complete, the sparkling wines by Can Sala winery rest in the bottle for a minimum of 72 months — Vinyes Can Sala - a period that can extend to over 12 years for the Cava Can Sala, the winery’s flagship label. The portfolio also includes a collection of historic vintages.
In addition to its white cavas, the winery produces a rosé cava, Vinyes Can Sala Rosado — a varietal Grenache aged for a minimum of 36 months.
An exclusive and confidential producer, the Can Sala winery makes between 10,000 and 15,000 bottles annually.
