The history of bodega Primitivo Collantes began in the XIXth century, when Primitivo and Tomás Collantes, two brothers from the northern Spanish region of Cantabria, decided to start a wine business in the village of Chiclana de la Frontera, Cádiz, Spain's southernmost province. The company began operating in what is currently its corporate headquarter; the technical and storage facility was built some years afterwards.

The estate vineyards of bodega Primitivo Collantes are divided into two parcels: Pozo Galván, 17.30 ha, and Matalián, 19.53 ha, both located in the vicinity of Chiclana, DO Jerez. Like the rest of Sherry country, the area has a warm southern climate, heavily influenced by the sea breeze coming from the Atlantic Ocean, a key element for developing the veil of flor. The soils are composed of the famed Albariza from Jerez, which retains the moisture and keeps the vines hydrated across the dry season. The Primitivo Collantes winery grows mainly two varieties: Palomino, Jerez's flagship grape, and Moscatel.

The portfolio of wines of bodega Primitivo Collantes is mostly comprised of DO Jerez fortified wines aged under a veil of flor. The winery also makes Vinos de Pasto - non-fortified Jerez whites aged under flor – and the vermouth 11 Mil 130. Yearly production is around 100,000 bottles.
