The wine Bodega Cerrón La Servil is one of the finest ever produced in the DO Jumilla. This Spanish red wine is made by Bodega Cerrón (Stratum Wines). In our view, this is the most interesting producer in the region.
This Crianza red wine is a blend of Monastrell and the local varieties Moravia Agria, Blanquilla and Rojal.
The grapes are sourced from El Cenajo, a 12-hectare certified organic vineyard with gravel and limestone soils located at roughly 900 metres of altitude. Planted with ungrafted vines from 1954 to 1956, it is tended following the guidelines of biodynamic farming.
Hand-harvested, the grapes fermented spontaneously with native yeasts in wooden vats. This red wine from Jumilla was then aged in the vats for 14 months.
Once bottled, the red wine Bodega Cerrón La Servil 2023 was kept for some time in the cellar before being released onto the market.
Decant this organic red wine before serving. This should age beautifully.
