Produced by Can Sumoi, the project of Pepe Raventós -head of bodega Raventós i Blanc- the wine Can Sumoi Xarel·lo is made from grapes grown in the freshest area of the DO Penedès.
A varietal Xarel·lo, this Spanish white wine is sourced from vineyards located at 350-400 metres of altitude, farmed following strict organic and biodynamic procedures.
Following the lunar calendar, the grapes were harvested in mid September. Once in the cellar, they were destemmed and gently crushed, after which the must fermented with indigenous yeasts in stainless steel tanks and concrete tanks.
After 16 days, this white wine from Penedès spontaneously began malolactic fermentation. Finally, the wine Can Sumoi Xarel·lo 2025 was aged on lees for 4 months with 2 weekly stirrings.
This is a fresh and transparent organic white wine.
