Casa de la Ermita Blanco Dulce is a sweet white wine entirely made from the French grape Viognier by the Casa de la Ermita winery in Jumilla, a region with a long tradition of producing some of the world's best sweet wines. Wines such as the legendary Fondillón, already mentioned in the writings of Shakespeare, Defoe and Verne.

The grapes used to produce Casa de la Ermita Blanco Dulce were naturally sweet and no sugar was added at any stage of the production. Thus, the high concentration of sugar was achieved allowing the grapes to overripe in the sun in order to increase their natural sugar content.

Once the grapes reached an optimal sugar level they were crushed and fermented at a temperature of 14.5ºC. To prevent further fermentation, the wine was filtered before being bottled and released onto the market.
