A varietal White Grenache, this Spanish sweet white wine is made from naturally overripe grapes coming from over 50-year-old vines which yield less than 1 kilogram per plant.
Harvested by hand, the grapes were brought to the cellar, destemmed and gently pressed. Then they were transferred into stainless steel tanks, where they underwent alcoholic fermentation.
In order to preserve the required sugar level to produce a sweet wine, alcoholic fermentation was cold-stopped. After that, Ètim Verema Tardana Blanca 2018 was aged for 4 to 6 months on its lees in French oak barrels.
Finally, this sweet white wine from Montsant was filtered and cold-stabilized prior to its bottling.
