The Maria Casanovas winery produced this Brut Nature Cava from a traditional blend of Parellada -the main component-, Xarel·lo and Macabeo. The grapes come from 9 hectares of estate-owned vineyards.
The grapes were harvested both manually and mechanically. Each of the Cava varieties was separately vinified in stainless steel tanks. Once alcoholic fermentation was completed, this Spanish sparkling wine was bottled. After that, it completed secondary fermentation, and then this organic Cava was aged for 15 to 18 months in the bottle.
