The white wine Pardas Rupestris is made by Celler Pardas, a trailblazer winery from Penedès.
This blended Spanish white wine is made from Xarel·lo and Malvasia de Sitges, two indigenous Catalan varieties which make for a rather special white wine from Penedès.
The vineyards have shallow calcareous soils where the vine roots in direct contact with the bedrock, a fact that brings a distinctive minerality to the wine.
Harvested by hand and carefully selected, the grapes were destemmed and gently crushed prior to fermentation. Then they were macerated for 3 to 4 days, after which Pardas Rupestris 2025 must was drawn off, and fermented under a controlled temperature.
Finally, this organic white wine was aged on lees for a couple of months, after which it spent a further three months in concrete tanks before being bottled.
