Celler Pardas

A champion of Penedès’s native varieties.
Oenologist Ramon Parera and agronomist Jordi Arnan, both native to the village of Sant Sadurní d'Anoia,
founded bodega Celler Pardas in 1996. The company's main facility is located in the XIXth century
family house that overlooks the Can Comas estate, located in the Vall del Riu Bitlles area of Alt Penedès.
A terroir-focused project that pioneered the recovery of the indigenous varieties of the DO Penedès
starting in the late XXth century, bodega Celler Pardas has become one of the main representatives of
region's "new wave", which has put on the international map of quality wine an area that is still mostly
known for producing huge quantities of run-of-the-mill Cava.
Mainly situated in the Can Comes estate, the vineyards of Bodega Pardas cover a surface area of 70
hectares at altitudes between 200 and 300 metres. A charming Mediterranean landscape where vines coexist with crops and forest trees, the estate is divided into three main areas: Les Obagues, with clay- limestone and rocky soils, Les Planes, with alluvial soils, and Els Costers, composed of limestone slopes. The Pardas winery also owns several parcels of old vineyards in the Costers de l'Anoia Area, and in 2022 it acquired a Grand Cru vineyard of Sumoll, El Coll de Guix, near the village of Igualada, in central
Catalonia.
The Can Comas estate was planted in the late 1990s mainly with the indigenous varieties from Penedès,
most notably the red Sumoll and the white Xarel·lo, which have become the signature grapes of Bodega
Pardas. The winery also grows Xarel·lo Vermell, Malvasia de Sitges and Monastrell, as well as two
international varieties, Cabernet Franc and Cabernet Sauvignon, a blend of grapes that goes into the red
wine Pardas Negre Franc, one of the company's all-time best sellers. As regards vineyard management,
the winery follows the principles of organic farming, does not plow the land and uses vegetal cover to
prevent soil erosion.
The bulk of the product portfolio of Celler Pardas is comprised of still wines, which are vinified with
native yeasts in stainless steel tanks, concrete eggs and oak barrels. One of the most interesting wines of
the catalogue is the flagship red Pardas Collita Roja, one of the very first and still one of the best varietal
Sumoll wines made in Catalonia, which played a key role in rescuing a much maligned variety from an
almost inevitable demise. Finally, the first Pardas sparkling wines, made from a blend of Sumoll and
Xarel·lo and marketed under the Corpinnat label, hit the shelves in 2022.
Current production of Bodega Celler Pardas is around 100,000 bottles.
