A rare Spanish white wine coming from DO Toro, a region known for its bold red wines, the wine San Román Malvasía is one of the bottlings of the San Román winery. This is the Toro project of Mariano García, one of Spain's most talented and experienced winemakers.
Made solely from Malvasía, the grapes are sourced from ungrafted vines, 60 years old on average, planted in sandy soils at 700 metres of altitude.
Hand-picked in late August, the grapes were fully destemmed, macerated for 12 hours with the skins and drawn-off by gravity. Then this white wine from Toro was fermented in 500-litre oak barrels with native yeasts.
After that, the white wine San Román Malvasía 2020 was aged on lees for 10 months. It was bottled in July 2021.
3,270 bottles produced.
