The wine project of Mariano García, one of Spain’s most celebrated oenologists, in DO Toro.

Located in the heart of DO Toro, Bodegas San Román is the second brand of the García family, headed by Mariano García, the former technical director of Vega Sicilia winery and one of Spain’s most accomplished winemakers. The García family also owns Bodegas Mauro, Mr. García’s first personal project, and Bodegas Garmón Continental, the third brand of the family, both in DO Ribera del Duero.

The vineyards of San Román winery cover a surface of 140 hectares, distributed across the villages of Pedrosa del Rey, Villaester and San Román de Hornija, in the province of Valladolid, and Morales de Toro, in the province of Zamora. The vineyards are farmed following organic procedures in conversion to biodynamic agriculture, which are beneficial for the microbial fauna of the soil and also enhance the biodiversity of the vineyard.

The area has an unforgiving climate, with harsh winters, very hot summers and little rainfall (300 to 400 mm per year), with great temperature differences between daytime and nighttime.

The flagship variety of the San Román winery is Tinta de Toro, which coexists with Grenache and some old plots of the white variety Malvasía. The vineyards, with an average age of 45 years, have poor, loose soils composed of sand and rocks with a clay layer underneath which acts as a water reserve in drought times. The soils are nourished with organic compost.

The wines of San Román winery are crafted methodically and with great attention to detail. Each variety and each plot of grapes is individually vinified. The grapes are selected on site, refrigerated on arriving at the premises and selected again before by being transferred by gravity into the fermentation tanks.

After fermenting with indigenous yeasts, the wines of Bodegas San Román are aged in French and American oak barrels of different sizes for variable amounts of time. The winery uses 30% new oak barrels for every vintage.

Though they exhibit the trademark intensity and concentration that characterizes the wines from DO Toro, the wines of the San Román winery are distinctively elegant, balanced and age-worthy. Focused on the production of red wines, the winery also crafts a critically acclaimed premium varietal Malvasía white wine.
