Made from Tinta de Toro with a 5% Grenache, the wine San Román is sourced from vineyards planted in 1977. Some of them, though, are even older. They are situated in an area with a Continental climate and great temperature differences between daytime and nighttime.
This varietal Spanish red wine from DO Toro went through an extremely meticulous winemaking process. Each plot was separately harvested and fermented depending on its specific needs and characteristics.
The grapes were destemmed and fermented at a low temperature in different types of containers. After macerating with the skins, this organic red wine was gently drawn off and transferred into 225 and 500-litre new and used French oak barrels.
After that, the red wine San Román 2022 from Bodegas San Román winery was aged for 22 months and clarified with egg whites before being bottled in January 2025. Before its commercial release, this red wine from Toro was cellared for no less than 12 months.

The masterful touch of top level winemaker Mariano García shines through. |
| Palate | Bold, robust, and nonetheless distinctively elegant. This, by the way, is the crucial feature of the best wines from Toro: the combination of the big structure of the grape, together with a finesse that one would hardly expect in such brawny wines. Loads of black fruit, wonderful mineral notes and ripe tannins. Texture is silky and acidity is no less than extraordinary. This wine from San Román winery has a long finish with some spicy and fruity remembrances. |
