The Elías Mora winery is based in DO Toro, a region that possesses a treasure trove of ungrafted pre-phylloxeric vineyards. The wine Viñas Elías Mora is made from some of those ancient plants, grown in rocky soils at 800 metres of altitude.
A varietal Tinta de Toro wine, the grapes were harvested by hand, destemmed and cold-soaked. Then they were cold macerated for a couple of days prior to being fermented in stainless steel tanks with selected yeasts.
After that, this Spanish red wine was drawn off and transferred into American oak barrels, where it was aged for 6 months.
Finally, the wine Viñas Elías Mora 2022 fwas filtered and clarified with egg whites before its bottling.
This varietal red wine from Toro is great with BBQ'd meat.
