Xarnego 2022
The wine Xarnego is a distinctively original ancestral sparkling wine born in Cádiz, Andalusia, on the southernmost tip of the Iberian Peninsula, and raised in Bonastre, Tarragona.
Produced by the Hemoglovinum collective project, one of whose members is Òscar Soneira, head of bodega Els Mecanismes, this Spanish sparkling wine is a blend of Palomino Fino (70%) and Macabeo (30%), vinified in a rather interesting way.
After completing fermentation, the Palomino Fino wine from Trebujena (Cádiz) was shipped to Bonastre (Tarragona), where it was aged for 12 months under a veil of flor in Palo Cortado Sherry casks.
Once the process was completed, the Palomino wine was blended with the Macabeo, whose natural refermentation generated the bubbles. Finally, the sparkling wine Xarnego 2022 was stacked for some time before being disgorged.
This Catalan-Andalusian ancestral sparkling wine is food-friendly and stimulating.
