The sparkler Ànima Mundi Noguer Baix is one of the bottlings of the Ànima Mundi collection of the AT Roca winery, comprised of minimal intervention wines crafted following biodynamic procedures, paying special attention to the lunar cycles and with no added sulfites.
Made solely from Macabeo, this Spanish sparkling wine is sourced from a single, organically certified plot planted 50 years ago in sandy-clay soils near Sant Sebastià dels Gorgs, Alt Penedès.
The non-destemmed grapes were pressed and then this Pét-Nat from Penedès fermented spontaneously in used 500-litre barrels. Following the ancestral method, the sparkling wine Ànima Mundi Noguer Baix 2021 was bottled before finishing the process, which was completed inside the bottle.
This low-sulfites sparkling wine was not filtered or clarified before being bottled.
