Made by the brilliant young winemaker Agustí Torelló Roca, the wine Ànima Mundi Camí dels Xops is a minimal intervention, low-sulfites Spanish sparkling wine crafted using the ancestral method. Ànima Mundi is the experimental branch of the family winery AT Roca, a member of the Corpinnat association of producers.
Coming from the heart of Penedès, this no added sulfites Pét-Nat is a blend of Xarel·lo and Macabeo coming from certified organic vineyards aged over 40 years and composed of soils with a high limestone content, which bring an edgy minerality and a remarkable freshness to the wine.
Meticulously harvested and selected, the grapes were pressed undestemmed and then the sparkling wine Ànima Mundi Camí dels Xops 2024 was fermented with native yeasts in old 225-litre French oak barrels and stainless steel tanks.
After that, this organic Pét-Nat from Penedès was bottled with no clarification, filtration or sulfites addition whatsoever.
We suggest pairing this low sulfites sparkling wine from Penedès with rice dishes and finger food. This bubbly will also make for an excellent aperitif and a nice after work sip.
