An original Spanish white wine made by José Pariente, the wine Apasionado de José Pariente is sourced from a single, 30+-year-old Sauvignon Blanc vineyard located in DO Rueda.
The first Sauvignon Blanc ever planted in Verdejo territory, the vines grow in limestone soils with pebble stones located on the highest area of the region.
This organic white wine is made from overripe, particularly high-acidic grapes that were exactingly selected during the harvest.
After a cold maceration, they were gently pressed and fermented with its lees for a period of 5 months. Clarified and cold filtered, the wine Apasionado de José Pariente 2023 was finally bottled in 50 cl. flasks.
The production of this dessert white wine is very limited.
