This varietal Pedro Ximénez is sourced from the freshest parcel of Pago La Cañada Navarro, a vineyard with tosca de antehojuela soils - a type of soil a tad coarser than the traditional Albarizas from Jerez - situated at around 480 metres of altitude, in Sierra de Montilla.
Farmed following sustainable techniques, the hand-harvested grapes were destemmed, gently crushed and then mildly pressed with a pneumatic press. After that, this Spanish white wine was drawn-off for 24-48 hours before being fermented in concrete vessels under controlled temperature.
After that, the white wine Los Insensatos La Manga del Negro 2021 was aged in the vessels under the flor veil for 11 months.
This is a savoury and terroir-driven white wine from Montilla-Moriles.

This varietal Pedro Ximénez is expressive and well-defined, with aromas of pears and quince, some spicy remembrances and a mineral suggestion.
Elegant and inviting, this wine of bodega Los Insensatos de la Antehojuela is mineral and gently salty, with a linear acidity and a very long finish with a calcareous note and a hint of green olives and umami.
