In 1998 Bodegas Alvear began producing a collection of vintage Spanish sweet wines made solely from Pedro Ximénez, the flaghsip variety of DO Montilla-MorilesAlvear Pedro Ximénez de Sacristía is one of them.

The grapes are sourced from the best plots of the winery. After a meticulous vinification, they were aged in the legendary "Sacristía" of Alvear, which stores the premium wines of the company.

Specifically, Alvear Pedro Ximénez de Sacristía 2005 was statically aged-that is, with no lees stirrings and no rackings-for 15 years minimum in American oak barrels.

This phenomenal sweet wine from Montilla-Moriles will pair excellently with chocolate and fruit desserts.

However, probably the best way to enjoy it is without food, as a meditation wine.

Appearance

The sweet wine Alvear Pedro Ximénez de Sacristía is deep mahogany with some brownish reflections.

Nose

Astoundingly complex, this Pedro Ximénez suggests balsam, candied citrus peel, caramel, marzipan and ginger,  with some spicy and wooden notes and subtle mineral remembrances. 

Palate

Powerful and luscious, this wine from bodega Alvear has a spectacular acidity which prevents the wine from being oversweet. This is an incredibly rich wine, with remembrances of sweet cedar, herbs, dates and figs, evolving into spices, tobacco, coffee and liquorice. Finish is immensely long and complex.

There is no doubt that Alvear Pedro Ximénez de Sacristía 2005 is a world-class sweet wine.

I tried meditation and it didn't work for me. So I switched to taking sips of this wine. It worked like magic. My mind is now completely calm.
