The wine Cuevas de Arom Altas Parcelas is the calling card of bodega Cuevas de Arom, the joint venture between Fernando Mora, an Aragonese Master of Wine known for its word at the helm of Bodegas Frontonio, and the Calatayud-based coop Bodegas San Alejandro.
This varietal Spanish red wine is sourced from a non-irrigated Grenache vineyard 50+ years of age planted at 700 metres of altitude, in slate, quartzite and limestone soils.
The grapes were harvested by hand, after which this Crianza red wine from Calatayud was spontaneously fermented in open-top concrete diposits with 30% full clusters.
After that, the red wine Cuevas de Arom Altas Parcelas 2021 from DO Calatayud was aged for 10 months in concrete diposits.
The name AROM, by the way, is simply "Mora" written backwards.
