Lustau Amontillado Escuadrilla is a fortified dry wine produced by Emilio Lustau.

After the harvest, the young Palomino grapes were vinified. The resulting wine was transferred into American oak barrels and fortified with wine alcohol until it reached an alcoholic degree of 15º.

Then the wine was aged following the biological method until the layer of yeasts serendipitously broke. At that moment, the winemaker fortified again the wine in order to reach 17º of alcoholic content.

From that moment on, this wine produced in the region of Jerez-Xérèz-Sherry became an Amontillado. After that, it was aged for over a period of 12 years using the traditional Soleras and Criaderas system.

Lustau Amontillado Escuadrilla, just as every Amontillado, was born to be a Fino, and only became what it is by sheer chance.

Appearance

Very bright, clean copper colour with some honey-coloured tinges and some amber glints.

Nose

Aromas of dry fruit, orange rind, candied fruit, honey and dried apricots. Some iodized notions, salty remembrances and hints of fresh coffee, toast, spices, toffee and liquor.

Palate

Dry, fresh and venerable. A remarkable mixture of saline notes, hints of liquor and iode and intimations of nuts, caramel, candied hazelnuts, yeasts, toast, chocolate and Eastern spices. Extremely long and complex finish.

Our personal opinion

Lustau Amontillado Escuadrilla is sharp and very elegant. We suggest pairing it with a premium Ibérico ham.
