This dessert wine from Lustau is crafted in part by Pedro Ximénez grapes that have been naturally sun-dried into raisins. In order to not have to add any sugar in the production of this wine, in addition to using as natural of a process as possible, the fermentation process is stopped when it has reached its optimal level. Then, this San Emilio raisin dessert wine is fortified with distillates and aged with the help of a traditional system of regular sediment rotation (sistema de solera y criaderas).
This is a great treat to enjoy alone, to finish a meal, to be enjoyed with desserts (this wine pairs very well with chocolates and is perfect for puddings), and this wine also pairs very well with blue cheeses and foie gras.

| Nose | Intense and very pleasant in the nose with no overwhelmingly sweet characteristics. There is a very wide range of raisins, with overripe grapes, dates, figs, hints of cocoa, caramel, coffee (this reminded me for a moment of a childhood memory of chewing a coffee bean, very pleasant aromas) and an elegant toasted background. |
| Palate | A very rich palate. Lustau Pedro Ximénez San Emilio has a passage that is flavorful and dense, silky like velvet, sweet, with some potency from the alcohol content. The raisins on the palate are entwined with dry fruits covered in caramel. Excellent acidity with finish that is very long, persistent, and leaves a pleasant but slightly bitter aftertaste. |
