The 2021 vintage of sparkling wine Recaredo Terrers Brut Nature of famed bodega Caves Recaredo, a member of the Corpinnat association of producers, is absolutely superb.
The backbone of this Spanish sparkling wine is Xarel·lo, blended with some Macabeo and Parellada.
The grapes are sourced from vines planted in soils with a high limestone content. They are grown following the guidelines of organic and biodynamic farming.
Harvested by hand, the grapes were separately vinified. Interestingly, the secondary fermentation of this spanish sparkling wine was kickstarted by adding organic concentrated must instead of cane sugar.
After its bottling, the sparklign wine Recaredo Terrers Brut Nature 2021 was aged for a minimum of 50 months and manually disgorged - with no addition of shipping liquor - prior to its commercial release.

| Palate | Fresh and poised, with a crisp and well-defined structure which is dry and smooth at the same time. The bubbles of this biodynamic sparkling wine of the prestigious Recaredo winery are nicely integrated, and the wine has a long finish with a delicate remembrance of aniseed and white fruit, nuanced by a smoky touch. |
