Details
The red wine El Mondongo is the ‘wildest’ of all Norrel Robertson's wines, produced by the Scottish Master of Wine at the facilities of bodega El Escocés Volante in the DO Calatayud.
The main variety of this Spanish red wine is Grenache, with a 10% of Mazuelo (Carignan), Bobal (aka Provechón) and Moristel, a native Aragonese variety. The grapes were sourced from four parcels planted between 750 and 900 metres of altitude, in red clay soils that magnify the fruit and garrigue aromas.
After being cold-soaked, the grapes were slowly fermented (20% full clusters) in open top diposits, with at most two pump-downs a day of the solid cap. This Crianza red wine was then pressed into concrete diposits and Flextank eggs, where this red wine from Aragón was kept for a period of 15 months.
Made only in special vintages, the red wine El Mondongo 2023 was bottled in June 2025. It is sold under the Vino de España label.
